The cypress-lined avenue will take you directly from Di Colle in Colle, an ancient 18th-century farmhouse restored respecting the surrounding area, a corner of paradise located between the beauty of the Umbrian countryside and Lake Trasimeno. The kitchen at Di Colle in Colle is led by the chef, whose approach combines tradition and innovation, resulting in dishes that tell the story of the land with a modern look.
He works with fresh, seasonal ingredients, many of which come directly from the facility's garden and small local farms, to offer genuine, locally linked cuisine.
His inspiration comes from traditional recipes, which he tries to enhance with respect, adding a touch of technique and creativity without ever distorting them. Experiences gained while traveling and working abroad have allowed him to learn about new methods and flavors, which he now uses with balance to best enhance the simplicity of the ingredients.
