Concept
The kitchen at Di Colle in Colle is led by Chef Konrad Gallus, whose approach combines tradition and innovation, resulting in dishes that tell the story of the land with a modern look.
He works with fresh, seasonal ingredients, many of which come directly from the facility's garden and small local farms, to offer genuine, locally linked cuisine.
His inspiration comes from traditional recipes, which he tries to enhance with respect, adding a touch of technique and creativity without ever distorting them. Experiences gained while traveling and working abroad have allowed him to learn about new methods and flavors, which he now uses with balance to best enhance the simplicity of the ingredients.

The Cypress Trail
Prima di arrivare al Di Colle e in Colle vi sembrerà di entrare in una vera e propria favola,passando da una strada sterrata tra i maestosi cipressi e campi colorati.

Before you get to Di Colle in Colle you will feel like you are entering a real fairy tale, a dirt road among the majestic cypresses and colorful fields with a few impervious curves will take you to paradise, but it is worth it, promise!
